Chicken Cacciatore, * Arroz con Pollo, * Oven-Fried Chicken, * Quick Chicken and Gravy * MoMo's Chicken and Broccoli Soup *



Chicken Cacciatore

Maybe not "authentic", but lower in cholesterol and fat, delicious and wholesome. A great dish for company, or just the family.

INGREDIENTS:

1 whole chicken
1 large onion, chopped
3 cloves garlic, mashed
5 fresh tomatoes, chopped; or 2 15oz cans of diced tomatoes
2 tsp Poultry seasoning
2 Bay leaves
1 tsp lemon pepper
1 tsp seasoned salt
1 tsp parsley
1 Tbs olive oil
16 oz spaghetti noodles

DIRECTIONS

Thoroughly wash chicken and remove skin and fat. Place in deep pot and cover with water. Add garlic, poultry seasoning, bay leaves, lemon pepper, seasoned salt and parsley. Bring to a boil, then reduce heat to simmer and cook covered for 2 hours, or until meat begins to fall off the bones. Remove chicken from water onto a plate to cool. Reserve all of chicken stewing water. Add olive oil to a deep skillet and lightly saute the chopped onion on medium heat until just clear, then add tomatoes. Once the chicken is cool enough to handle, remove meat from bones, break or cut into bite-sized chunks and add to onion and tomatoes with 1 cup of reserved stewing water. Bring to a boil, then simmer sauce uncovered for 20 minutes.

Bring the reserved stewing water back to a boil and add the spaghetti noodles. Cook until tender. Drain in a colander, but do not rinse. Serve immediately with sauce.

Arroz con Pollo

Chicken and Rice with a Latin flavor.

INGREDIENTS

1 whole chicken (washed & skinned)
1 small onion, minced
4 cloves garlic, mashed
2 tsp Adobo seasoning

Combine above in a large pot or deep skillet, add 8 cups water, bring to boil, then cook until tender. Remove chicken from pot, cool and de-bone. Save 2 cups of broth aside.

2 green peppers, cut in 1/2 inch slices
2 red peppers, cut in 1/2 inch slices
1 medium onion, halved, then cut in 1/2 inch slices
3 garlic cloves, minced
1 tsp Adobo seasoning1/2 tsp lemon pepper
1 Tbs olive oil

In same pot, saute above ingredients in olive oil until just tender. Add:

1 tomato, cut into 1/2 inch chunks
1 Tbs lemon juice
1 can tomato sauce
2 cups broth
de-boned chicken

Bring to a boil. Serve over rice.

Oven-Fried Chicken

Another lite idea for chicken with less cholesterol but great taste.

INGREDIENTS

1 chicken, cut up, skin removed
1/2 cup unbleached flour
1/2 cup cornmeal
1 tsp chili powder
1 tsp garlic powder
1 tsp onion powder
1 tsp lemon pepper
1 tsp salt
olive oil or cooking spray
milk

DIRECTIONS

Pre-heat oven to 375 degrees. Spray, or coat with olive oil, a cookie sheet or shallow baking dish. Wash and thoroughly dry skinned chicken parts. Combine dry ingredients in a large zip-type bag. Dip chicken parts in milk, then, 2-3 at a time in the bag, shake to coat well. Place on cookie sheet and bake for one hour.


Quick Chicken and Gravy
Ready in less than 30 minutes

INGREDIENTS

4-5 frozen chicken tenderloins
1 Tbl olive oil
2 C chicken broth
1/2 tsp garlic powder
1/2 tsp seasoned salt
1/2 tsp poultry seasoning
1 Tbl flour
Salt and pepper to taste

DIRECTIONS

Heat olive oil in skillet, place frozen chicken tenders, sprinkle with seasonings and lightly brown. Reduce heat to medium, add chicken broth. Cook covered 15 minutes until chicken is tender. Remove from pan. Whisk flour into broth and cook over medium heat until thickened. Serve with mashed potatoes and your favorite vegetable.

MoMo's Chicken and Broccoli Soup

INGREDIENTS

1 cup left-over chicken, chopped
1 medium head of broccoli, cut into short, small flowerets, stems peeled and coarsley chopped
::NOTE:: Cauliflour may also be used, or both together, about 2 cups of chopped vegetables.
2 1/2 C chicken broth
4 oz. cream cheese, softened
1/2 tsp lemon pepper
1/2 tsp poultry seasoning
1 tsp parsley
Salt and pepper to taste

DIRECTIONS

In a deep pot combine broccoli (and/or cauliflour), chicken broth, lemon pepper, poultry seasoning and parsley. Cover and bring to a boil, then reduce to medium and cook broccoli until it is tender. Add chicken and return to boil. Add cream cheese and stir until completely incorporated and creamy. Serve.
